The Atlanta food scene has really changed so much over the past few years. I first started coming here some 6 years ago, eating in various places from bar b q to fine dining. It was okay but not stunning. One restaurant stood out, Rolling Bones bar b q restaurant. Sadly it has now closed which is a real shame because the food was pretty damn good. Décor was not really bothered with, the main focus being on the food. Long, slow smoked cooking was the order of the day anything from baby back ribs to brisket. All smoked over seasoned logs and up to 15 hours with not a gas flame in sight. This was real bar b q, and tons of it. I have had a pretty serious passion for real bar b q ever since I went to North Carolina years ago.
I love Bramley apples – they are unique as they retain a strong, tangy taste and have a melt-in-the-mouth texture when cooked, so I’ve created some mouth-watering Bramley recipes including Bramley Apple Cheesecake and a Lancashire Cheese & Bramley Apple Pie. I’m also a judge in the Great Bramley Bake In - a competition to find home cooks’ best Bramley apple dishes. We’re asking people to share Bramley recipes with their own unique twist, they can be sweet or savoury - crumbles and pies made special or something more unusual.
It’s easy to enter via the Bramley Apple Facebook page (www.facebook.com/bramleyapple) and it’s not just those with recipes who can get involved - those who enjoy eating Bramley dishes will help to decide the winners, just vote for your favourites on Facebook. The deadline for entries is midnight on 28 February. I’ll be helping to judge the final winner with the help of the public vote. All shortlisted winners will receive a £100 voucher with the grand prize for the champion being an all expenses paid weekend course at a top cookery school, as well as a goody bag of Phil Vickery and Bramley apple merchandise.
Not an early start for this trip, so it was nice to get up and say goodbye to the family in a civilized way. I had to pack a lot of gear, including a dinner jacket and smart white chefs jacket (more about this later) I normally pride myself with packing light, but not this time. As I was to be away for the best part of three weeks I had to pack three large bags. My boss on this trip, Lynsey, had told me that we were making 9 films in total, so to make sure I had at last one shirt per film plus trousers!! That alone nearly filled one bag. Boss, plus Nigel (sound) and Will (camera/researcher) left two days earlier to get GV’s prior to my arrival. Billy my driver picked me up and duly delivered me bang on time to terminal 3 London Heathrow.

Our first two products are a featherlight Vanilla and Raspberry Fondant Cup Cake mix and a soft Chocolate Chunk Cookie mix are now joined by Very Lemony Cupcake Mix and Double Chocolate Cupcake Mix. All have taken many hours of cooking and perfecting. We do the hard bit all you have to do is make and enjoy them.
