Cajun Wild Alaska Salmon with Cucumber and Chilli Dip
Ingredients
- 2 tbsp olive oil
- 4 X 150g wild Alaska salmon fillets, skin on
- 4 tbsp Cajun seasoning
- zest of 1 lemon
- salt and black pepper
- Cucumber Chilli Dip:
- 1/2 cucumber, cubed
- 1 red chilli, sliced
- 4 tbsp Greek yoghurt
- zest of 1 lemon
- Juice of 1/2 lemon
- 1 handful of mint, chopped
- 1/4 red onion, finely sliced
Method
- Brush a little olive oil over each salmon fillet and sprinkle over the Cajun seasoning and lemon zest
- Mix together the ingredients for the dip and season to taste
- Cook the salmon for 2-3 minutes each side, on the barbecue or griddle, until cooked through
- Serve salmon fillets with cucumber chilli dip and a fresh green salad
Phil's Tips
Ensure you also brush the barbecue grill with oil to prevent the salmon fillets from sticking.
