It’s essential that the oven, tray and oil are very hot to get the initial lift. The end result is very light fluffy pud, that is cooked through. It will not be as high as a normal Yorkie but pretty close. I use a 12-hole muffin tin but only fill them half full or just under, as this allows them to rise, and hold their shape.

Cauliflower has become very popular recently from pizza to the old reworked favourite cauli cheese. It can work really well in certain dishes, but to get any real flavour, you need to roast or cook really hard to drive off a lot of the moisture and intensify the flavour. Every dish I cook with cauliflower I roast or sauté first. I also apply the same rule to pumpkin and squash. The smaller the florets when you roast the drier the rough purée will be so don’t purée to a smooth paste.

Basically anything goes here, I had a cracker recently at Atlanta airport, I like the fact that I felt really full and satisfied with a salad. I add ham to mine, also plenty of dressing, the thing to remember is to chop the ingredients as small as possible. The end result should be really packed full of texture and flavour.
