Hot Chocolate Pudding With Chocolate Fudge Sauce

As a small child the only chocolate pudding I had was at school, it was vile. A stodgy, overcooked leaden mess, with the most appalling watery brown water masquerading as custard poured over the top. I had not eaten chocolate pudding since then until a couple of years ago when I set out to make the perfect pud. After many hours and trials we finally arrived at this pudding. It is the best, ( well I would say that, I know) but its very light, chocolaty and smothered with the an intense creamy, fudgey sauce. It's the sort of pudding that once you have had one spoonful you can't wait for the next one, and the next one etc etc. It keeps well in a fridge or freezer and will not spoil, so it can be made well in advance. Perfect for a cold January day, oh, just one word of caution, if you eat too much, I'm afraid you will end up spending the afternoon snoozing on the sofa. You have been warned!

Leg or brown meat on turkey I believe makes better burgers, purely because the meat is juicier. I don't want to get to tecci, but its all to do with the leg muscles working harder, and applies to all white leg meat, so pork, chicken and even game.

Breast meat is fine also, and is extremely good for you, but needs a little more attention when preparing and cooking. Skinned breast of turkey can be less that 2% fat, so when it cooks, it can cook slightly drier, leaving you with a crumbly texture. But I have discovered a great trick. If you add a little mayonnaise to the raw mix it really helps to keep the burger beautifully juicy and tasty. You only need a very small amount, as you can see below.
