Ingredients

  • 250g red or white cabbage very finely sliced, best on a Japanese mandolin
  • 1clove of garlic, peeled and finely chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp any vinegar
  • 2 good pinches of castor sugar
  • 4 tbsp chopped fresh mint
  • salt and freshly milled black pepper

  • Mix all the ingredients together really well, best left for an hour if you can.
