- 1 ripe avocado, skinned and stoned
- zest of 2 limes
- juice of 1 lime
- 1 tbsp finely chopped red onion
- ½ red chilli, deseeded and finely sliced
- 3-4 tablespoons fresh coriander, chopped
- salt and freshly milled black pepper
- To make the guacamole: blend, or mash the avocado with lime zest and juice.
- Stir through the onion and chilli, coriander and then season to taste.
- Cover and refrigerate.
