Ingredients

  • 2 tbsp olive oil 
  • 1 medium onion peeled and finely chopped
  • 1 clove garlic, crushed
  • 1 tsp ground cumin
  • ¼ tsp dried chilli flakes 
  • ½ tsp paprika
  • 1 tsp ground cumin 
  • ½ tsp ground cinnamon
  • 400g can chopped tomatoes in juice
  • water
  • 1 x 400g can kidney beans, rinsed and drained 
  • 1x 400g can black beans, rinsed and drained  
  • 1 x 400g can haricot beans, rinsed and drained
  • 1 x 10g veg stock cube
  • salt and freshly ground black pepper

Method

  • Heat a large heavy pan with the oil and sauté the onions and garlic and spices, until soft.
  • Add tomatoes, water, beans and stock cube and really mix well.
  • Bring to the boil and then gently simmer for 15-20 minutes.
  • Season well with salt and pepper.
  • Serve on boiled rice.
