Quick Cooked Egg Fried Rice With Avocado, Salad Onions And Horseradish

Sounds different I know, but this combination really works. An easy, delicious vegetarian snack or main course.


  • 4 tbsp extra virgin olive oil
  • 2 large eggs, beaten
  • 4 x 115g microwaveable basmati rice
  • re-heated in the microwave
  • 2 ripe avocados cubed
  • 2 fresh basil pots, chopped roughly
  • 6 salad onions, sliced diagonally
  • salt
  • pepper
  • 2 tbsp horseradish

  1. Heat the oil in a wok. Add the beaten eggs and cook until very dry, stirring all the time.
  2. Add the warmed rice and really mix well.
  3. Add the cubed avocado, chopped basil and salad onions.
  4. Season well with salt and pepper, then add the horseradish, again mix well.
  5. Serve in deep bowls.

Phil's Tips

Do not overcook the avocado, just warming will allow the beautiful green oils to mix with the rice.

Any soft herb works well. If you don't fancy

basil, try coriander.
