Your own bacon-flavoured mayonnaise is a unique and delicious addition to sandwiches, burgers, and even as a dip for fries. This is the perfect flavour builder for your Jersey Royal, and you can't beat homemade sauces and dressings.

Ingredients
 

  • 8 rashers streaky bacon
  • 8 tbsp mayonnaise
  • 1 tbsp mango chutney
  • 4 tbsp chopped chives
  • cracked black pepper

Instructions
 

  • Place the bacon in a baking tray and bake or grill until nice and crispy, don’t rush it, or it will not be crunchy, or it will burn.
  • Once cooked, remove from the tray and cool.
  • Chop the bacon finely and pop it into a bowl, then add all the other ingredients and mix well.
  • Serve.
