Baltic-Inspired Cod Liver Toast with Pickled Onion

A luxurious seafood starter celebrating rich cod liver, crisp bread and sharp Baltic flavours.

Ingredients
 

  • 400 g tinned cod liver in its own oil
  • 8 slices of sourdough bread
  • 2 tbsp cod liver oil from the tin
  • 1 small red onion, very thinly sliced
  • 2 tbsp white wine vinegar
  • 1 tsp caster sugar
  • small handful of fresh dill
  • freshly ground black pepper

Instructions
 

  • Mix the sliced onion with vinegar, sugar and a pinch of salt. Leave for 15 minutes to soften.
  • Toast the sourdough until golden and crisp.
  • Drain the cod liver slightly, keeping a little of the oil.
  • Spoon the cod liver generously over the toast.
  • Add the pickled onion, drizzle with a little reserved oil and finish with fresh dill and black pepper.
