Even the kids will try this. It must be the slightly sweeter angle; they really are tasty, but you must drain the sprouts well!!!!!!

Ingredients
 

  • 500 g frozen sprouts
  • 4 small shallots, peeled and chopped finely
  • 1 tbsp vegetable oil
  • 50 ml water
  • 2 level tsp Madras curry paste
  • 1 tbsp mango chutney
  • 150 g crème fraiche
  • 4 tbsp fresh parsley, chopped
  • 1 pinch salt and freshly milled black pepper

Instructions
 

  • Cook the sprouts in plenty of boiling salted water until soft in the centre or about 10 minutes. They need to be slightly overcooked.
  • Cool them in cold water, then drain them really well to stop them from cooking; leave the sprouts to drain in a colander to get rid of as much water as possible. You can do this a few hours before.
  • When you come to serve, there is only one way to warm them up: pop them in the microwave.
  • Warm the oil, add the shallots and water and cook for 3 minutes to soften and drive out all the moisture. Then add the curry paste and cook for another 1 minute, then cool and add the mango.
  • Add the sprouts to the shallots and curry, then add the crème fraiche, chutney, and chopped parsley.
