Ingredients
 

  • 250 g red or white cabbage very finely sliced, best on a Japanese mandolin
  • 1 garlic clove, peeled and finely chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp any vinegar
  • 2 pinch caster sugar
  • 4 tbsp fresh mint, chopped
  • salt and freshly ground black pepper

Instructions
 

  • Mix all the ingredients together really well leave for an hour before eating if you can.
