Another classic from the 1970s. A nostalgic family favourite, a mouthwatering chopped green salad.

Ingredients
 

  • 0.5 large cucumber
  • 4 spring onions
  • 3 sticks of celery
  • 2 Little Gem lettuce
  • 50 g spinach
  • 50 g watercress
  • 1 punnet mustard and cress

For the dressing

  • 1 egg yolk
  • 2 tbsp Dijon mustard
  • 1 tsp caster sugar, level
  • salt and freshly ground black pepper
  • 4 tbsp sherry vinegar
  • 3 tbsp extra virgin olive oil
  • 3 tbsp safflower or sunflower oil
  • dash water if needed

Instructions
 

  • Finely chop the cucumber, onions, and celery, then place it all into a bowl
  • Chop the Little Gem lettuce, spinach and watercress
  • Finally, using scissors, snip in the mustard and cress, mix well
  • Place all the ingredients for the dressing in a liquidiser and blitz well. It will emulsify fairly quickly; you may need a little water to dilute it slightly
  • Pour over the chilled salad and mix really well
