Another classic from the 1970s. A nostalgic family favourite, a mouthwatering chopped green salad.
Ingredients
- 0.5 large cucumber
- 4 spring onions
- 3 sticks of celery
- 2 Little Gem lettuce
- 50 g spinach
- 50 g watercress
- 1 punnet mustard and cress
For the dressing
- 1 egg yolk
- 2 tbsp Dijon mustard
- 1 tsp caster sugar, level
- salt and freshly ground black pepper
- 4 tbsp sherry vinegar
- 3 tbsp extra virgin olive oil
- 3 tbsp safflower or sunflower oil
- dash water if needed
Instructions
- Finely chop the cucumber, onions, and celery, then place it all into a bowl
- Chop the Little Gem lettuce, spinach and watercress
- Finally, using scissors, snip in the mustard and cress, mix well
- Place all the ingredients for the dressing in a liquidiser and blitz well. It will emulsify fairly quickly; you may need a little water to dilute it slightly
- Pour over the chilled salad and mix really well
