Coriander Chilli Honey Bean Turnovers
Golden, flaky, sweet-heat turnovers bursting with creamy beans, coriander, and honeyed chilli goodness.
Ingredients
- 400 g can baked beans
- ¼ tsp red chilli flakes
- 4 tbsp chopped fresh coriander
- 1 tbsp unsalted butter, soften
- 1 tbsp runny honey
- 1 tbsp cornflour
- 2 tbsp water
For the pastry
- 500 g puff pastry
- beaten egg
Instructions
- Warm the beans with the butter, chilli and honey.
- Mix a little cornflour and water, bring the beans to a boil, thicken slightly, and cool.
- Add the fresh coriander once cooled.
- Preheat the oven to 190C, gas 5.
- Roll out the pastry and cut 4 x 15cm discs; I use a saucer.
- Brush the edge with beaten egg and fill half the pastry with thickened beans.
- Fold over, press out the excess air, and seal and crimp the edges with a fork.
- Brush with beaten egg, make a small incision, and bake in the preheated oven for 20 minutes until well risen and nicely browned.
- Remove from the oven and cool for 10 minutes before eating, or they will be too hot.
