Courgette Mangetout Sage Cakes are savoury, pan-fried cakes made with grated courgette, mangetout, and fresh sage.

Ingredients
 

  • 4 very small courgettes, washed
  • handful of young peas pods or mange tout
  • 6 leaves fresh sage, chopped
  • 1 clove garlic, finely crushed
  • 2 tbsp self-raising flour
  • 1 medium egg
  • 1 pinch salt
  • ground pepper
  • juice 1 small lime

Instructions
 

  • Finely slice the courgettes and mange tout into matchstick-size pieces.
  • Add the sage, garlic, and flour into a bowl and mix well.
  • Next, add the egg, salt, pepper and fresh lime and mix well to bind.
  • You may need to add a little more flour or even a touch of water to bind.
  • Heat a large frying pan and add a little oil.
  • Spoon into 4 equal amounts and spread out a little.
  • Cook for 2 minutes, then flip over and cook for a further 2-3 minutes until nicely browned.
  • Meanwhile, make up the dip.
