Ingredients
 

  • 160 g squid, plus heads, opened and cut into thin strips.
  • 160 g self-raising flour
  • 200 ml milk
  • vegetable oil for frying
  • pinch salt

Instructions
 

  • Heat the vegetable oil until it reaches 185˚C. Dip small amounts of squid into flour, then milk, and back into the flour.
  • Fry in the hot oil until crispy. Drain well and sprinkle with salt.
  • Serve at room temperature, 40g portions of squid piled onto aubergine salad (100g portion) with 20g chermoula around and placed slightly over.
