Egg-free mayonnaise has a creamy texture and tangy flavour that perfectly complements any dish. Plus, it's vegan-friendly and free of any cholesterol or dairy products. I highly recommend giving it a try!

Ingredients
 

  • 4 tsp tarragon Dijon mustard, heaped teaspoons
  • 110 ml soya milk
  • 225 ml olive oil , or 50 50 with sunflower or rapeseed oil
  • 50-75 ml white wine vinegar
  • 1 pinch salt
  • 1 pinch ground pepper
  • 100 mls water
  • ½ jar lumpfish roe
  • 4 tbsp chopped chives

Instructions
 

  • Place all the ingredients into a measuring jug.
  • Blitz with a stick blender, and the whole thing will come together nicely in seconds
  • Finally, add enough water to form a nice consistency.
  • Add Siracha to taste and stir in the half-jar of lumpfish roe and chopped chives.
