Ingredients
 

  • 2 tbsp olive oil
  • 2 medium onions, peeled and VERY finely chopped
  • 1 tsp ground cumin
  • ¼ tsp dried chilli flakes
  • ½ tsp paprika
  • 1 tsp ground cumin
  • ½ tsp ground cinnamon
  • 400 g chopped tomatoes in juice
  • 100 mls water, roughly
  • 400 g kidney beans, rinsed and drained
  • 400 g black beans, rinsed and drained
  • 400 g haricot beans, rinsed and drained
  • 1 veg stock cube
  • salt
  • pepper
  • 8 cloves garlic, peeled then very finely sliced
  • 4 tbsp vegetable oil
  • 200 g sour cream
  • guacamole
  • grated Cheddar cheese
  • hot dogs/hot dog rolls
  • 4 large potatoes, baked and cooled, cut in half and scored, oiled then grilled.
  • tortilla chips

Instructions
 

  • Heat a large heavy pan with the oil and sauté the onions, garlic, and spices until soft.
  • Add tomatoes, water, beans and stock cube and really mix well.
  • Bring to the boil and then gently simmer for 15-20 minutes.
  • Season well with salt and pepper.
  • Heat the oil and gently cook the garlic slices until cooked through and nice golden-brown colour, but do not burn.
  • Serve on boiled rice or with hot dogs, twice-cooked baked potatoes or tortilla chips.
  • Top with sour cream, guac and cheese and fried garlic slivers.
