- 6 tbsp fresh mint leaves, washed well and chopped finely
- 2 large ripe tomatoes, chopped
- 2 tsp fresh chilli, finely chopped
- 1 clove garlic, peeled and finely chopped
- 4 tbsp olive oil
- finely grated zest and juice from 1 large lime
- pinch salt
- pinch freshly milled pepper
- Place the mint, tomatoes, chilli, garlic, lime juice, zest, and olive oil into a bowl and mix well.
- Spoon into a bowl, and season with salt and pepper to taste.
- Leave for 20 minutes, stir and serve.
