Ingredients
 

  • 6 tbsp fresh mint leaves, washed well and chopped finely
  • 2 large ripe tomatoes, chopped
  • 2 tsp fresh chilli, finely chopped
  • 1 clove garlic, peeled and finely chopped
  • 4 tbsp olive oil
  • finely grated zest and juice from 1 large lime
  • pinch salt
  • pinch freshly milled pepper

Instructions
 

  • Place the mint, tomatoes, chilli, garlic, lime juice, zest, and olive oil into a bowl and mix well.
  • Spoon into a bowl, and season with salt and pepper to taste.
  • Leave for 20 minutes, stir and serve.
