Ingredients
 

  • 4 extra yellow egg yolks
  • 2 small cloves fresh garlic, pasted
  • 2 pinches salt
  • 1 pinch ground pepper
  • 1 tbsp white wine vinegar
  • 200 mls sunflower oil
  • 2 tbsp chopped fresh garlic leaves or flowers, optional

Instructions
 

  • Place the egg yolks into a bowl, add garlic, salt, pepper, vinegar, and hand whisk.
  • Gradually add the oil, and the mix will thicken nicely.
  • Once all the oil is incorporated, adjust the seasoning. You may need to add a little water to make a softer consistency.
  • Finally, add the fresh garlic leaves if using.
  • Leave for 10 minutes to infuse.
  • Serve.
