This is one of my favourite Christmas pudding recipes ever. It tastes fabulous and is Gluten-Free, so, everyone can enjoy it.
Ingredients
- 110 g raisins
- 75 g sultanas
- 1 small carrot, grated
- 1 small apple, grated
- 175 ml cider
- 50 g runny honey
- 50 g Gluten-Free cornflour
- 100 g rice flour
- 50 g soft brown sugar
- 50 g dried figs, chopped
- 50 g pine nuts
- 50 g chopped dates
- 50 g currants
- 50 g olive oil
- 50 g candied fruits, chopped optional
- 35 g flaked almonds
- 2 tsp mixed spice
- 2 medium free-range eggs, beaten
- 1 pinch salt, to taste
Instructions
- Soak all the fruit and carrot in the cider overnight.
- The next day, mix it well, then add the sugar, pinenuts, honey, flours, olive oil, candied fruit, almonds, spice, egg, and salt.
- Mix well and pack into a 2lb pudding basin.
- Cover with greaseproof paper and foil and secure well.
- Steam for 4 hours.
- Remove and cool.
