This is one of my favourite Christmas pudding recipes ever. It tastes fabulous and is Gluten-Free, so, everyone can enjoy it.

Ingredients
 

  • 110 g raisins
  • 75 g sultanas
  • 1 small carrot, grated
  • 1 small apple, grated
  • 175 ml cider
  • 50 g runny honey
  • 50 g Gluten-Free cornflour
  • 100 g rice flour
  • 50 g soft brown sugar
  • 50 g dried figs, chopped
  • 50 g pine nuts
  • 50 g chopped dates
  • 50 g currants
  • 50 g olive oil
  • 50 g candied fruits, chopped optional
  • 35 g flaked almonds
  • 2 tsp mixed spice
  • 2 medium free-range eggs, beaten
  • 1 pinch salt, to taste

Instructions
 

  • Soak all the fruit and carrot in the cider overnight.
  • The next day, mix it well, then add the sugar, pinenuts, honey, flours, olive oil, candied fruit, almonds, spice, egg, and salt.
  • Mix well and pack into a 2lb pudding basin.
  • Cover with greaseproof paper and foil and secure well.
  • Steam for 4 hours.
  • Remove and cool.
