I absolutely love sweetcorn! It is such a delicious and versatile vegetable that can be used in so many different dishes. Whether it's grilled, boiled, or roasted, sweetcorn always adds a lovely sweetness and crunch to any meal.

Ingredients
 

  • 2 medium corn cobs
  • 2 tbsp any oil
  • 1 pinch salt
  • 1 pinch ground pepper

Instructions
 

  • Stand the sweetcorn on a board and, using a sharp knife, split it right down the middle.
  • Then lay flat on a board and cut into quarters lengthways.
  • Heat the oil in a large pan.
  • Season the sweetcorn wedges with salt and pepper and place it corn-side-down into the oil.
  • I cover mine with a splash guard so I don’t have to clean the stove!!!!!
  • Cook over moderate heat until well-coloured and starting to bend slightly.
