Ingredients
 

  • 1 ripe avocado, skinned and stoned
  • 2 limes, zest
  • 1 lime, juice
  • 1 tbsp red onion, finely chopped
  • ¼ red chilli, deseeded and finely sliced
  • 4 tbsp coriander, fresh chopped
  • salt and freshly ground black pepper

Instructions
 

  • Blend or mash the avocado with lime zest and juice.
  • Stir through the onion and chilli, coriander and then season to taste. Cover and refrigerate.
