- 1 ripe avocado, skinned and stoned
- 2 limes, zest
- 1 lime, juice
- 1 tbsp red onion, finely chopped
- ¼ red chilli, deseeded and finely sliced
- 4 tbsp coriander, fresh chopped
- salt and freshly ground black pepper
- Blend or mash the avocado with lime zest and juice.
- Stir through the onion and chilli, coriander and then season to taste. Cover and refrigerate.
