I absolutely love Houmous dip! It's a great snack option, perfect for dipping vegetables or pita bread. The creamy texture and savoury flavour make it a crowd-pleaser at any party or gathering. If you haven't tried my Houmous dip yet, I highly recommend giving it a go!
Ingredients
- 2 tbsp olive oil
- 1 small red onion, roughly chopped
- 1 tbsp fresh ginger, finely chopped
- 2 cloves garlic, finely chopped or crushed
- ½ tsp ground cumin
- ½ tsp smoked paprika
- pinch red chilli seeds
- 200 g houmous
- 150 g sun blush tomatoes, chopped
- juice and zest of 1 large lime
- 1 pinch salt
- 1 pinch freshly milled black pepper
- 25 g pine nuts, lightly toasted
- a little extra virgin olive oil
- 3 tbsp fresh mint, roughly chopped
- smoked paprika
Instructions
- Heat the 2 tbsp of olive oil, add the onion, ginger, and garlic, and cook for 2-3 minutes.
- Next, add the cumin, paprika and chilli and mix well. Cook for a further 2 minutes, then cool.
- Place into a bowl once cooled and add the houmous and mix well.
- Add the tomatoes, lime juice, salt, pepper, and mint, and mix well.
- Serve in a deep bowl topped with pine nuts, olive oil, fresh mint and a dusting of smoked paprika.
