Miami Citrus and Garlic Fish

Fresh white fish, lime, orange, garlic and chilli deliver sunshine on a plate with spectacularly fresh Florida flavours.

Ingredients
 

  • 700 g 4 x 175g white fish fillets, such as sea bass or snapper
  • 2 tbsp olive oil
  • 3 garlic cloves, finely chopped
  • Zest and juice of 1 lime
  • Zest and juice of 1 orange
  • 1 red chilli, finely sliced
  • 1 tsp smoked paprika
  • 1 tsp honey
  • 2 tbsp chopped fresh coriander
  • Salt and freshly ground black pepper
  • 1 avocado, diced
  • 2 spring onions, sliced

Instructions
 

  • Mix the olive oil, garlic, lime juice, orange juice, chilli, paprika and honey.
  • Place the fish in a shallow dish and pour over the marinade. Leave for 10 minutes.
  • Heat a large frying pan over medium-high heat.
  • Remove the fish, reserving the marinade, and cook skin-side down for 4–5 minutes.
  • Turn and cook for another 2–3 minutes, depending on thickness.
  • Pour the reserved marinade into a small saucepan and boil for 2 minutes.
  • Add the orange and lime zest.
  • Serve the fish with the hot citrus sauce, avocado and spring onions.
  • Finish with plenty of fresh coriander.

Notes

Don't drown good fish in sauce. You want the citrus to lift the flavour, not completely hide it.
