Ingredients
- 2 tbsp olive oil
- 1 medium onion , peeled and finely chopped
- 1 garlic clove, crushed
- 1 tsp ground cumin
- ¼ tsp dried chilli flakes
- ½ tsp paprika
- 1 tsp ground cumin
- ½ tsp ground cinnamon
- 400 g can chopped tomatoes in juice
- water
- 400 g kidney beans, rinsed and drained
- 400 g black beans, rinsed and drained
- 400 g haricot beans, rinsed and drained
- 1 veg stock cube
- pinch salt and freshly ground black pepper
Instructions
- Heat a large, heavy pan with the oil and sauté the onions, garlic and, spices until soft.
- Add tomatoes, water, beans and stock cube and really mix well.
- Bring to the boil and then gently simmer for 15-20 minutes.
- Season well with salt and pepper.
- Serve on boiled rice.
