Ingredients
 

  • 4 tbsp olive oil
  • 2 small red onions, sliced
  • 2 cloves garlic crushed
  • 2 medium sweet potatoes, cut into 2cm pieces
  • 1 red pepper, cut into 2cm pieces
  • 1 can kidney beans, drained and rinsed
  • 2 10g vegetable stock cubes
  • 200 ml water
  • pinch dried chilli flakes
  • 1 tsp smoked paprika, level teaspoon
  • 225 g halloumi
  • 1 cm cubes
  • fresh coriander
  • lime wedges
  • natural yoghurt

Flatbreads

  • 225 g self-raising flour
  • pinch salt
  • pinch ground pepper
  • 1 tsp ground turmeric
  • 2 tbsp extra virgin olive oil

To Serve

  • 4 tbsp fresh mint, roughly chopped
  • 180 g runny natural yoghurt

Instructions
 

  • Preheat the oven to 220C gas 7.
  • Place the olive oil, onions, garlic, sweet potatoes, pepper and kidney beans into a bowl.
  • Season well with salt and pepper and pour into a baking tray.
  • Dissolve the stock cubes in the boiling water, then add the chilli and paprika.
  • Pour over the vegetables and pop into the oven. Cook for 15-20 minutes, and then remix well.
  • Cook for 15 minutes until all liquid evaporates, and the veg are nicely coloured.
  • Remove from the oven and gently break up the potatoes with a fork. Don’t go mad; add halloumi and warm through; keep warm.
  • Place the flour into a bowl and add the pepper, salt, turmeric, oil, mint and enough runny yoghurt to make a very soft dough. You can add a little milk or water if you want.
  • Divide the dough into 4 pieces and roll out to make 4 thin discs.
  • Heat a dry, non-stick pan and cook each flatbread for a few minutes on each side to blister and take a little colour.
  • Once cooked, slice open halfway and fill each pocket with the veg mix.
  • Top with fresh coriander, a squeeze of lime and a little yoghurt.
