Sardinian Seafood Pasta with Tomato, Chilli and Garlic

Ingredients
 

  • 350 g linguine or spaghetti
  • 250 g raw king prawns
  • 500 g mussels, cleaned
  • 200 g squid, sliced into rings
  • 400 g chopped tomatoes
  • 4 garlic cloves, finely sliced
  • 1 red chilli, finely sliced
  • 150 ml dry white wine
  • 3 tbsp extra-virgin olive oil
  • small handful fresh parsley, chopped
  • 1 lemon
  • 2 pinches sea salt and black pepper

Instructions
 

  • Cook the pasta in plenty of salted boiling water until just al dente.
  • Meanwhile, heat the olive oil in a large frying pan.
  • Add the garlic and chilli and cook gently for 1 minute.
  • Add the squid and cook for 2 minutes.
  • Pour in the wine and bring to a rapid simmer.
  • Add the tomatoes and mussels, cover and cook for 4–5 minutes until the mussels open.
  • Add the prawns and cook for another 3–4 minutes.
  • Drain the pasta, reserving a mugful of cooking water.
  • Toss the pasta through the seafood sauce, adding a splash of pasta water if needed.
  • Finish with parsley, lemon juice and plenty of black pepper.

Notes

Don't drown it in sauce. You want the pasta, seafood and tomatoes to taste like themselves.
