The light crumbing of the turkey breast fillet makes the result juicy and succulent.
Ingredients
- 2 tbsp olive oil
- 2 eggs, beaten
- 200 g cooked long grain rice
- 300 g turkey breast slices, flattened slightly
- 1 lightly beaten egg
- 4 tbsp flour
- 10 tbsp breadcrumbs
- 4 tbsp olive oil
- 1 tbsp soft salted butter
- 1 red pepper, sliced
- 4 spring onions, finely sliced
- 2 tbsp olive oil
- salt
- pepper
- lemon
Instructions
- Heat a wok and add 2 tbsp of olive oil.
- Add the beaten eggs and mix well until the egg is cooked and dry; this is the secret.
- Add a little salt and pepper and the rice and warm through, moving the rice all the time.
- Cook for 3-4 minutes, then keep warm.
- Heat the 4 tbsp oil and add the butter heat until foaming. The butter will help brown the breadcrumbs.
- Lightly flour the turkey breast fillet, then add to the beaten egg and then into the breadcrumbs, patting down, so the crumbs stick well.
- Add the crumbed slices to the hot oil and butter and cook for 2-3 minutes on each side until cooked, then drain well on a kitchen towel.
- Finally, sauté the spring onions and pepper for a couple of minutes to soften, season well with salt and pepper.
To Serve
- Place the fried rice onto a warm plate and top with the cooked schnitzel.
- Finally, add the Sauté peppers and onions.
- Squeeze a little lemon over.
