Ingredients
 

  • 2 tbsp olive oil
  • 2 eggs, beaten
  • 200 g cooked long grain rice
  • 300 g turkey breast slices, flattened slightly
  • 1 lightly beaten egg
  • 4 tbsp flour
  • 10 tbsp breadcrumbs
  • 4 tbsp olive oil
  • 1 tbsp soft salted butter
  • 1 red pepper, sliced
  • 4 spring onions, finely sliced
  • 2 tbsp olive oil
  • salt
  • pepper
  • lemon

Instructions
 

  • Heat a wok and add 2 tbsp of olive oil.
  • Add the beaten eggs and mix well until the egg is cooked and dry; this is the secret.
  • Add a little salt and pepper and the rice and warm through, moving the rice all the time.
  • Cook for 3-4 minutes, then keep warm.
  • Heat the 4 tbsp oil and add the butter heat until foaming. The butter will help brown the breadcrumbs.
  • Lightly flour the turkey breast fillet, then add to the beaten egg and then into the breadcrumbs, patting down, so the crumbs stick well.
  • Add the crumbed slices to the hot oil and butter and cook for 2-3 minutes on each side until cooked, then drain well on a kitchen towel.
  • Finally, sauté the spring onions and pepper for a couple of minutes to soften, season well with salt and pepper.

To Serve

  • Place the fried rice onto a warm plate and top with the cooked schnitzel.
  • Finally, add the Sauté peppers and onions.
  • Squeeze a little lemon over.
