Sauce Mixture

  • ¾ pint chicken stock
  • 10 tbsp olive oil
  • 100 g chopped tomatoes
  • ½ onion, finely chopped
  • tbsp tomato purée
  • 10 g coriander, finely chopped
  • 1 garlic clove, finely chopped
  • 1 pinch salt
  • 1 pinch dried red chilli flakes, or to your taste

Garnish

  • ½ pint tomato soup
  • ½ avocado pear, roughly chopped
  • 35 g tortilla plain lightly salted
  • 15 g Monterey Jack cheese, grated
  • 1 pinch coriander, chopped

Instructions
 

  • Heat oil, add onions & garlic & sweat until soft.
  • Add chilli flakes & tomato puree & cookout.
  • Add tomatoes, chicken stock, salt & coriander. Bring to simmer for 2 mins. Serve in a bowl add tortilla chips, Monterey Jack cheese, avocado pear & coriander
