Sauce Mixture
- ¾ pint chicken stock
- 10 tbsp olive oil
- 100 g chopped tomatoes
- ½ onion, finely chopped
- 1½ tbsp tomato purée
- 10 g coriander, finely chopped
- 1 garlic clove, finely chopped
- 1 pinch salt
- 1 pinch dried red chilli flakes, or to your taste
Garnish
- ½ pint tomato soup
- ½ avocado pear, roughly chopped
- 35 g tortilla plain lightly salted
- 15 g Monterey Jack cheese, grated
- 1 pinch coriander, chopped
Instructions
- Heat oil, add onions & garlic & sweat until soft.
- Add chilli flakes & tomato puree & cookout.
- Add tomatoes, chicken stock, salt & coriander. Bring to simmer for 2 mins. Serve in a bowl add tortilla chips, Monterey Jack cheese, avocado pear & coriander
