Ingredients
 

  • 2 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 2 tsp green ginger, finely chopped
  • 1 tsp caraway seeds
  • 1 small red onion, peeled and finely chopped
  • 1 cloves garlic, peeled and chopped
  • 400 g ripe tomatoes, cut into quarters
  • 100 g soft brown sugar
  • 50 mls white wine vinegar
  • salt and freshly milled black pepper

Instructions
 

  • Heat the oil in a large pan, add the spices and cook for a few minutes to release their pungent aroma and flavour.
  • Add the onions, garlic and ginger and cook for a further 2 minutes so they soften.
  • Pop in the chopped tomatoes.
  • Pour in the vinegar and sugar and bring to the boil.
  • Season well with salt and pepper.
  • Cook until soft and pulpy, re-season if necessary.
  • Add extra oil once cooled to taste.
