Ingredients
- 2 tbsp extra virgin olive oil
- 1 tsp ground cumin
- 2 tsp green ginger, finely chopped
- 1 tsp caraway seeds
- 1 small red onion, peeled and finely chopped
- 1 cloves garlic, peeled and chopped
- 400 g ripe tomatoes, cut into quarters
- 100 g soft brown sugar
- 50 mls white wine vinegar
- salt and freshly milled black pepper
Instructions
- Heat the oil in a large pan, add the spices and cook for a few minutes to release their pungent aroma and flavour.
- Add the onions, garlic and ginger and cook for a further 2 minutes so they soften.
- Pop in the chopped tomatoes.
- Pour in the vinegar and sugar and bring to the boil.
- Season well with salt and pepper.
- Cook until soft and pulpy, re-season if necessary.
- Add extra oil once cooled to taste.
