Pep up your pancakes with an Italian Tiramisu-style filling.

Ingredients
 

  • 2 tsp instant coffee
  • 2 tbsp water
  • 250 g self-raising flour
  • 1 pinch or two of salt
  • 1 medium egg
  • 300 ml milk, approx.
  • 250 ml strong coffee
  • 2 tbsp brandy, optional
  • 200 ml double cream
  • 200 g mascarpone
  • 100 g caster sugar
  • 150 g grated bitter chocolate
  • cocoa powder and icing sugar to dust

Instructions
 

  • Make the coffee, then add to the cold milk.
  • Place the flour and salt in a bowl and mix well.
  • Add the egg and enough milk and bring together to form a thick batter.
  • Lightly oil 4 x 8cm steel baking rings, then add a little oil to a non-stick frying pan.
  • Place the rings into the pan and gently heat.
  • Add half the pancake batter to each ring and cook for 2-3 minutes.
  • As the pancake sets, loosen the edge and lift off the ring, then carefully flip over to cook for a further 2-3 minutes to set.
  • Repeat giving you 8 pancakes.
  • Place four pancakes back into the rings and sprinkle with a little warm coffee. Spoon more coffee over the other four pancakes, but leave them on the plate.
  • Whisk the cream, mascarpone and sugar together until thick.
  • Sprinkle bitter chocolate onto the soaked pancake in the mould, then fill until just under the rim of the mould. Repeat with the other 3. Chill the rest of the filling.
  • Top with the other pancake, press and chill well.
  • Lift off the ring (you may need a quick blast with a blowtorch), add a spoon of the reserved chilled mix, and sprinkle with grated chocolate and cocoa powder.
