Ingredients
- 3 tbsp fajita or cajun seasoning
- 400 g wild Alaska salmon, thinly sliced
- 2 tbsp olive oil
- 8 tortilla wraps
- 125 ml sour cream
- 2 handfuls coriander, chopped
- salt and freshly ground black pepper
Guacamole
- 1 ripe avocado, skinned and stoned
- zest of 2 limes
- 1 lime juice of
- 1 tbsp red onion, finely chopped
- 0.5 red chilli, deseeded and finely sliced
Instructions
- To make the guacamole: blend or mash the avocado with lime zest and juice. Stir through the onion and chilli, then season to taste. Cover and refrigerate
- Sprinkle fajita seasoning over the salmon and fry in hot oil for 2-3 minutes, turning halfway, until cooked through
- Place the salmon in wraps with plenty of homemade guacamole, sour cream and coriander leaves - wrap up tightly and enjoy!
