Ingredients
 

  • 3 tbsp fajita or cajun seasoning
  • 400 g wild Alaska salmon, thinly sliced
  • 2 tbsp olive oil
  • 8 tortilla wraps
  • 125 ml sour cream
  • 2 handfuls coriander, chopped
  • salt and freshly ground black pepper

Guacamole

  • 1 ripe avocado, skinned and stoned
  • zest of 2 limes
  • 1 lime juice of
  • 1 tbsp red onion, finely chopped
  • 0.5 red chilli, deseeded and finely sliced

Instructions
 

  • To make the guacamole: blend or mash the avocado with lime zest and juice. Stir through the onion and chilli, then season to taste. Cover and refrigerate
  • Sprinkle fajita seasoning over the salmon and fry in hot oil for 2-3 minutes, turning halfway, until cooked through
  • Place the salmon in wraps with plenty of homemade guacamole, sour cream and coriander leaves - wrap up tightly and enjoy!
