This delicious dip is a blend of creamy yoghurt, crunchy pistachios, a hint of spicy pepper, and sweetness from the honey. It's a perfect balance of flavours that will elevate your snacking experience.

Ingredients
 

  • 250 g thick Greek yoghurt
  • 2-3 tbsp fresh mint, finely chopped
  • 150 g pistachios, toasted chopped, not too fine but not too rough
  • 2 red peppers, well roasted
  • 4-6 tbsp runny honey
  • 3-4 tbsp pomegranate seeds

Instructions
 

  • Place the yoghurt into a bowl, add the fresh mint and half the pistachios, and mix well.
  • Next, place half into a deep serving dish, and add half the peppers and a tablespoon of honey.
  • Just swirl through so you see each component.
  • Then, repeat this, adding a drizzle of honey and topping it with a bit of mint and pomegranate seeds.
  • Serve with the cakes.
