Christmas Sausage Rolls
I like sausage rolls that are not soggy, fatty or undercooked rubbish. Here is a lovely recipe.
Ingredients
- 500 g ready rolled puff pastry
- 500 g good quality sausage meat, not too fatty, say 15-20% is perfect
- 75 g finely chopped dried apricots
- 75 g finely chopped Medjool dates
- 100 g finely chopped chestnuts
- 2 tbsp chopped fresh sage
- ½ tsp ground cloves
- 1 egg beaten
Instructions
- Preheat the oven to 200°C gas 6.
- Mix all the ingredients for the filling together well.
- Place the pastry sheets on a board and cut 5cm wide strips.
- Brush generously with beaten egg.
- Using a piping bag, pipe the sausage meat onto the strips, slightly to one side.
- Fold over and seal the edge well.
- Brush again with beaten egg, then chill well.
- Cut into small rolls and cook until browned, crisp and cooked through.

Notes
Ensure the sausage meat and chorizo are at room temperature; it makes it easier to pipe.
