A classic Greek salad, simple and delicious.
- 500 g best tasting ripe tomatoes, roughly chopped
- 1 small red onion, finely sliced
- 2 tbsp rice wine vinegar
- 6 tbsp extra virgin olive oil Greek
- 200 g feta cheese cubed
- ground pepper
- 2 tbsp chopped parsley
- 1 lemon, juice
- extra Greek olive oil to serve
- Mix really well and leave for 20 minutes to serve.
