Ingredients
 

  • 500 g best tasting ripe tomatoes, roughly chopped
  • 1 small red onion, finely sliced
  • 2 tbsp rice wine vinegar
  • 6 tbsp extra virgin olive oil Greek
  • 200 g feta cheese cubed
  • ground pepper
  • 2 tbsp chopped parsley
  • 1 lemon, juice
  • extra Greek olive oil to serve

Instructions
 

  • Mix really well and leave for 20 minutes to serve.
