Ingredients
- 2 tbsp olive oil
- 600 g wild Alaska salmon fillets, skin on
- 4 tbsp Cajun seasoning
- 1 lemon zest
- salt and freshly ground black pepper
Cucumber Chilli Dip
- ½ cucumber, cubed
- 1 red chilli, sliced
- 4 tbsp Greek yoghurt
- 1 lemon zest
- ½ lemon juice
- 1 handful of mint, chopped
- ¼ red onion, finely sliced
Instructions
- Brush a little olive oil over each salmon fillet and sprinkle over the Cajun seasoning and lemon zest
- Mix the ingredients for the dip and season to taste
- Cook the salmon for 2-3 minutes on each side, on the barbecue or griddle, until cooked through
- Serve salmon fillets with cucumber chilli dip and a fresh green salad.
