Ingredients
 

  • 2 tbsp olive oil
  • 600 g wild Alaska salmon fillets, skin on
  • 4 tbsp Cajun seasoning
  • 1 lemon zest
  • salt and freshly ground black pepper

Cucumber Chilli Dip

  • ½ cucumber, cubed
  • 1 red chilli, sliced
  • 4 tbsp Greek yoghurt
  • 1 lemon zest
  • ½ lemon juice
  • 1 handful of mint, chopped
  • ¼ red onion, finely sliced

Instructions
 

  • Brush a little olive oil over each salmon fillet and sprinkle over the Cajun seasoning and lemon zest
  • Mix the ingredients for the dip and season to taste
  • Cook the salmon for 2-3 minutes on each side, on the barbecue or griddle, until cooked through
  • Serve salmon fillets with cucumber chilli dip and a fresh green salad.
